Generic/basic knives will be sharpened at 18 degrees unless otherwise requested. this 18 degree bevel angle is intended to optimise the process of honing in a pullthrough sharpener which are typically set at 20 degrees. Finished on a 400grit belt and cut off the burr with a fine diamond honing rod which leaves a crisp and toothy ege with a mildly convexed grind, offering imroved edge damage resistance.

Professional grade European kitchen knives from manufacturers such as Wustoff, Zwilling, Victorinox, Sabatier, Ninja and similar knives made from steels up to 59 HRC. Sharpened at 14-16 degrees and finished on 1000 grit belt, burr removed on ceramic rod and stropped for a fine edge.

Professional grade European kitchen knives sharpened or reprofiled and minor chipping or tip repair etc £0.75 per inch

Reprofiling heavily worn blades and repairing major damage or re-curve £1 per inch

Once your knives have been sharpened professionaly, with the right tools and good practice you will be able to keep them nice and sharp for at least a year or two depending on how heavily they are used. Generally speaking the cheaper a knife was the softer (and thicker)the steel is likely to be and therefore will perform worse and go blunt more quickly but will also be more easily resharpened and honed.
